Skullcaps
The custom of wearing a skullcaps was most probably instituted in Talmudic times (approximately the second century CE). The first mention of it is in the Talmud in Tractate Shabbat, where if discusses fear of G-d. Covering the head is a sign of humility, acknowledging that G-d is watching, and "above".

Tallit (Tallis, Prayer Shawl)
A Tallit is a four cornered garment worn during prayers. The fringes on the Talit or called Tzitzit, and these Tzitzit make the wearing of the Talit significant. The Bible commands that as a remainder of G-d’s commandments, Tziztit be attached to all four cornered garments. Being that today such garments are not worn, in order to fulfill the commandment, during prayers, a Tallit is put on. A Tallit is symbolic to our love for G-d’s commandments.
